The Orinda Country Club has a current opening for a full-time Sous Chef. The Sous Chef reports directly to the Executive Chef, with the expectation that the Sous Chef will have an in-depth familiarity with kitchen operations and possess the ability to quickly and authoritatively delegate job tasks to a large staff. The Sous Chef must also be able to draw upon your considerable experience as a culinary chef who has worked in many different roles and settings to effectively coach and mentor developing chefs.
The Sous Chef works alongside the Executive Chef to manage daily kitchen activities, including overseeing staff, aiding with menu preparation, ensuring food quality and freshness, and monitoring sanitation and stocking. The Sous Chef ensures meal quality and consistency by following designated recipes.
Primary Duties
· Lead kitchen team in Executive Chef's absence
· Expedite dinner service during open hours
· Enforce cleaning schedule and suggestions for better cleaning practices
· Create daily specials
· Enforce recycling program and ensure it is properly followed
· Expedite dinner line during peak periods
· Ensure proper closing procedures are followed
· Ensure a first-in, first-out food rotation system in freezers and verifies all food products are properly dated and organized for quality assurance
· Ensure sanitation practices are followed
· Create new concept for employee meal menus
· Ensure all fish and meat products are handled properly and rotated
· Assist with food and product ordering
· Assist in all banquets as needed

· Previous Restaurant/Country Club Sous Chef Experience
· Extensive Food and Beverage Knowledge
· Strong Organizational Skills
